I made this cake for my son’s birthday. I split the ingredients between three tins and cooked them for approximately 40 minutes. I added the sugar syrup as I was concerned the cake might be dry. The cake turned out perfectly; a lovely moist sponge. I would even go so far as to say it’s the most delicious cake I’ve ever made! The whole family loved it and I would make again.

HI Stacey,

In one of Janes other recipes she suggest freezing the sponges for the night after making and cutting them as she suggested that she finds it easier to decorate a frozen sponge. I have done this recpe today and. i can confirm that decorating a frozen cake was definitely easy.

Hi Jade,

I would say if you then follow the cooking instructions for the “celebration victoris sponge” i would say you would be about right as i think that the weights used in that recipe are about the same as half of this recipe 🙂

I used this recipe and split the mixture between 4x 8inch sandwich tins- took about 20mins on 170oC. Turned out perfectly! 🙂

The party is Sunday, If I make it on Saturday is it best to store in the fridge until a few hours before will that be ok?
